Por que a los lenguados se les quita la piel?
Es una cosa que no he entendido nunca…., la piel si se fríe bien queda crujiente y está buenísima.
Cuando compro lenguados, siempre pido al pescatero/a que saque las tripas y escame la piel, pero no los pele ni quite la cabeza. Si es pescado fresco de verdad vale la pena disfrutarlo enterito!
En todo caso contra gustos….
Esta es una receta fácil y rápida para disfrutar comiendo un buen lenguado.
INGREDIENTES para dos personas:
– 2 Lenguados de ración
– Un poco de leche
– Harina
– Aceite para freír
– 50 Gr de mantequilla
– El zumo de 1 limón
REALIZACIÓN:
Salar el pescado y pasarlo por la leche
Enharinar y sacudir un poco para sacar el exceso de harina.
Freír en abundante aceite a fuego medio para que se haga bien y no se queme
Mientras se fríe el pescado, en una sartén aparte derretir la mantequilla, cuando esté derretida y bien cliente, pero sin que se tueste, añadir el zumo de limón y dejar al fuego unos minutos hasta que la salsa ha espesado un poco.
Poner el lenguado ya frito en el plato y rociar con la salsa.
Servir recién hecho.
