Brandada de bacalao con escalibada

Este plato lo comimos hace poco en un restaurante y, aparte de que estaba buenísimo, me pareció muy fácil de hacer y, además, muy original, vamos de esos platos para no complicarte cuando tienes invitados pero quedar como una reina.

La receta de la brandada la hice con la Thermomix, pero quien no la tenga sirve cualquier receta de brandada, la red está llena, os pongo esta del blog delicooks.com de ejemplo, por que es la más parecida a la de Thermomix que he encontrado (Sin leche ni patata) y seguro que está buenísima.

 

INGREDIENTES para 4 personas:

Para la escalibada:

– 3 Pimientos rojos

– 2 Berenjenas

Para la brandada:

– 1/2 Kl. de bacalao desalado sin piel ni espinas

– 200 Gr. aceite de oliva virgen extra

– 1 Diente de ajo (Puedes poner más pero para mi gusto con 1 es suficiente)

– Pimienta blanca recién molida

– Sal si es necesario (depende del bacalao)

 

REALIZACIÓN:

Para hacer la escalibada poner los pimientos y las berenjenas enteros en el horno caliente a 180º unos 75 minutos más o menos (Depende del horno)

Cuando estén hechos dejarlos enfriar y cuando estén fríos se pelan y se parten en tiras

 

Para hacer la brandada:

Escurrir bien el bacalao y secarlo con un trapo o papel de cocina. Reservar.

Poner el aceite y el ajo en el vaso de la Thermomix, programar 6 minutos, temperatura Varoma, velocidad 3 1/2

Incorporar el bacalao y triturar en velocidad 6 hasta que la mezcla quede homogénea. Poner un punto de sal si es necesario y la pimienta blanca molida.

 

Para servir:

Poner en el plato el molde y rellenar hasta la mitad con la brandada, poner encima una capa de berenjena y otra de pimiento.
