Huevos con jamón en Cocotte
Esta receta la he sacado del libro “La cocina en 10 min. de Ferrán Adrià”
Más sencilla imposible…. !!
La verdad es que cuando la vi en el libro me pareció una mezcla un poco rara de ingredientes (Por la nata…) pero resulta un plato muy gustoso, sobre todo si usas un buen jamón y huevos bien frescos.
Yo lo hice en las mini cocotte de cerámica que son geniales para ir directo del horno a la mesa con una buena presentación.
He variado un poco los tiempos de cocción para adaptarlo a nuestros gustos (claras cocidas y yemas cruditas) y en 12 min. hemos tenido en la mesa un plato bien sencillo pero especial.
INGREDIENTES para 2 personas:
– 2 Huevos frescos
– 2 Lonchas de jamón serrano
– 1/2 Vaso de nata líquida
– Sal
– Pimienta
– Aceite de oliva
ELABORACIÓN:
Untar las mini cocotte con aceite de oliva
Disponer en el fondo las lonchas de jamón cortadas a trocitos, poner el huevo encima.
Salar un poco y cubrir con nata líquida
Poner en el horno precalentado a 200º (Calor arriba y abajo)
Dejar cocer durante 11 min.
Poner por encima un poco de pimienta
Al sacar del horno tapar la cocotte con su tapa y servir.
Notas:
En la receta original pone 5 min. de cocción pero para mi gusto queda demasiado cruda la clara del huevo.
Con 11 min. queda la clara cocida y la yema jugosa. Pero te aconsejo comer enseguida, si no la yema acaba de cocinarse en la cocotte y queda muy hecha.
El tiempo de cocción y calor varía según el horno, estos tiempos son los que he necesitado en el mio, Miele a vapor combinado, tú tendrás que probar en el tuyo hasta encontrar el tiempo/temperatura ideal.
