Ensalada con frutos secos y queso de cabra
Me encantan las ensaladas con todo tipo de cosas pero, en cambio, es una cosa que no hago muy a menudo en casa ¿Por qué? No lo sé…. es fácil, rápido, barato, bueno, sano…… debe ser por que me falta imaginación.
Así que cuando me aprendí esta que os voy a explicar la guarde en mi memoria como “La ensalada de casa”
En realidad la versión definitiva es un “machihembrado” de varias ensaladas que he comido por ahí.
Así que vosotros, que seguro tenéis más imaginación, podéis poner lo que más os guste y personalizarla a vuestra manera.
Esta vez, como estamos en otoño, le he puesto granada, pero se puede cambiar (o añadir) por manzana, fresas, aguacate………….
INGREDIENTES por persona:
– Hojas de lechugas variadas, rucula, canónigos, espinacas baby……. (A vuestro gusto)
– Unos cuantos piñones
– Unas cuantas pasas de corinto
– 2 Nueces peladas
– Granada
– 1 Rodaja de queso de cabra (Rulo)
– 1 rebanada de pan de molde
Para el aliño:
– Sal Maldon
– Aceite de oliva virgen
– Vinagre de Modena
– Una cucharadita de miel
REALIZACIÓN:
Tostar la rebanada de pan y cortarla al tamaño del rulo de cabra (Yo lo hago con un molde de los de emplatar)
En una sartén con un poco de aceite dorar los piñones
Limpiar la granada. Se hace fácilmente si se parte por la mitad y con una cuchara de madera se va golpeando por la piel (la parte cortada mirando hacia abajo), los granos salen solos y no te ensucias.
Poner las lechugas en el plato
Poner por encima los frutos secos y la granada.
Poner el queso sobre las rebanadas de pan tostado y meter un rato al horno hasta que empieze a dorarse.
Poner el queso sobre la ensalada y aliñar con la sal y la vinagreta
Servir antes de que se enfríe el queso
Como hacer la vinagreta:
Mezclar dos partes de aceite, 1 de vinagre, una cucharadita de miel y mezclar bien.
